Help!

I guess I have the summer time blues with cooking...nothing I usually make sounds good or I feel too hot to even turn on the oven. The only thing that really sounds good is eating out - but since that isn't an option every night - I was wondering...does anyone have any great summer time meals they make? I am trying to get more into salads too. I welcome any and all ideas!

My best summer-time meals are the ones where I send Matthew out to the grill with all the meat and vegetables. And I sit inside with a tall glass of iced tea. :)

But I'll try to think of some recipes.

Yeah, I'm w/ Joc. We've been using our grill almost every night. My favorite these days is chunks zucchini brushed w/ olive oil and sprinkled w/ some sort of seasoning (McCormick has this great garlic and onion mix that we love). I put them on skewers (sp?) and pop them on the grill.

I also love Mexican. Either taco salad or fajitas w/ grilled chicken.

Or then sometimes I'll whip up a Cobb salad--grilled chicken, avocado, hard boiled eggs, cheese, bacon...mmm, makes me hungry just thinking about it.
